Arrange alternate layers of rice, peppers, turkey and tomatoes in a greased 2 1/2-quart baking dish. Season each layer with salt and pepper. Mix gravy, tabasco sauce and butter; pour over casserole. Bake, uncovered, in preheated 350-degree oven for 30 minutes or until bubbling. Makes about 6 servings.
The nice thing about this recipe is that you can pretty much do your own thing. Use more or less turkey, peppers, or tomatoes; use white or brown rice; make your own gravy or use canned; add the amount of tabasco you like, etc. I like the gravy to be a little on the thick side so some of it stays on top instead of all going through to the bottom. I thought that the mixture of gravy and tomatoes was going to be weird, but it was delicious!
